Even the best of the best of pasta machines does not come with everything you need to create the best pasta you can make.
For example, as mentioned in a previous article, most pasta machines come with one, two or maybe three cutters. Depending on the brand and the model, your pasta machine purchase may have the capability to make fettucine or spaghetti or another size pasta. However, we have not found one that comes with every possibility.
Be sure to check to see if the pasta machine you are considering comes with your favorite pasta attachments included. If not, be sure to check the availability and the cost of any additional cutters. We have found that while many pasta makers seem inexpensive on the surface, the real cost begins to add up as you choose additional cutters. Occasionally, the additional cutters can turn the $50 cost of the basic pasta machine into a $200 or $300 purchase. Be wise. Consider your options before buying.
Some pasta makers do not include the tray. We know some cooks who use wax paper and then struggle with getting the pasta from the wax paper "tray" to the pasta rack. It is suggested that you always be certain that the pasta maker you are considering comes with a tray for the cut pasta.
If you are considering ravioli or other stuffed pastas, check the prices of those pasta trays. They are not included with any of the basic pasta machines we have seen. Ordinarily, the cost of a ravioli tray is not sufficient to prohibit the purchase.
No pasta machine is worth its cost if you do not purchase pasta drying racks. Drying racks are an essential to making good pasta. There are numerous pasta drying racks available on the market today. Some are wood stands with arms for hanging and drying the pasta. Other drying racks can be attached to the wall and come in a wide variety of styles with options available that allow you to determine the quantity of pasta you will make at one time.
To prevent frustration and to control the overall cost of making pasta at home, be certain that you understand exactly what is contained in the basic pasta machine package. Check to be certain that all accessories are readily available from the manufacturer, if not a local store. Many retail stores today carry the basic pasta machine but few accessories. Specialty stores may carry attachments and additional cutters. Check to see if they are in stock and will remain in stock.

Compare prices of the basic pasta machines. Compare the prices of accessories and additional cutters. Don't forget the pasta drying rack. If there is one thing to "over buy" it is the pasta drying rack. There is nothing more frustrating than preparing the pasta dough, cutting the pasta, and then discovering that you are short on rack space for drying.
Make a list of exactly what you believe you will need, including all the cutters. Then, it is always suggested that you buy the best pasta machine you can afford. It will pay for itself in time.
